It’s such a busy time of year! That’s why I wanted to re-share one of my go-to dinners when I’m short on time but still craving something special.

Copycat Alice Springs Chicken is one of my "hero" dinners!

Notes from My Kitchen

This is definitely one of my splurge recipes, even though it's pretty low in carbs. Even so, I make a few adjustments.

  • Bacon: A sprinkle still gives plenty of flavor, so I use very little or skip it on my portion.
  • Sauce: I go easy on the honey mustard, but I do drizzle a bit over my veggies because it is delicious.
  • Cheese: I use just enough to get that gooey, melty bite.
  • Sides: I always pair it with lots of roasted veggies I make in the air fryer.

I'm all about compromise these days! So I don't give up on the savory dishes I love, I just try to make them a little healthier. 😉
